Dunnet Bay Distillery is located in Caithness in the far north of Scotland, just a 15 minute drive from John O’Groats. Using 2 copper stills, the first of which Elizabeth started production in 2014. The second still, Margaret started production a few years later. Theirs is a small batch process of 500 litres. Care is taken with each bottle as they are all individually wax sealed, numbered and hand signed before leaving the distillery.
Their locally harvested botanicals include sea buckthorn, verbena and rowan berries. The juniper comes from two different countries – Italy and Bulgaria. The sherry cask edition is created by aging their original Rock Rose gin in Oloroso sherry casks. The aging process imparts an amber hue on the gin and a wonderful rich flavour, with hints of dried fruits. As the sherry cask is a special edition it cost a little more than their Signature gins, this meant that the delivery was free. The normal delivery price is £7.50. The bottle was dispatched the following day after ordering and arrived 2 days later. I also received a lovely thank you note with a garnish recommendation of a sprig of verbena, or a shard of the honeycomb ( of the Crunchie bar variety, not the actual honeycomb from bees)
