Four Pillars Gin is a craft distillery based in Healesville in Melbourne’s Yarra Valley (Australia). Founded in 2013, they make gin. Actually they make gins, plural. From their original multi-award-winning Rare Dry Gin to the only gin in the world made just for a Negroni, from a Navy Strength Gin that is best in its class to our entirely unique Bloody Shiraz Gin.

Four pillars have a lot of magnificent gins. My favourite gin in their Olive Leaf Gin which is as good in a gin and tonic with a sprig of Rosemary and a piece of fresh lemon peel (I like to express a little over the top and then add it to the serve) or, with orange peel and a couple of Sicilian olives as it is in a Dirty Martini (60ml Olive Leaf Gin, 20ml Dry Vermouth, 2 bar spoons of olive brine and however many olives you want to add-I use Sicilian Green olives in a jar and I put five olives on a cocktail pick. I do like a meal with my drink! I also add a small piece of fresh lemon peel to the serve. Seriously- this is my favourite Martini of all time and this gin makes it so easy to like and enjoy a Martini. 700ml | 43.8% ALC./VOL | $85 AUD Four Pillars have quite a range of gins and some are award winning so I will only mention a few here otherwise I will be writing a book. I should mention Shiraz Gin. I think this would be the most well know of their award-winning gins and it makes a wonderful serve neat over ice, with Mediterranean Tonic in a G&T and in cocktails. It pairs very well with lemon flavours if you want to explore cocktails. One of my recent ones- Pillar of Society- was 60ml Shiraz Gin, 60ml Coconut Water, 30ml Limoncello shaken with ice and strained into a chilled glass and then drizzle a tiny amount of Pomegranate Liqueur over the top. Garnish with edible flowers to make it look extra special and you will see in the photo below-I was also playing with some dry ice for a bit of fun. This gin is also magnificent in a Negroni- I use equal parts Shiraz gin, Sweet Vermouth and Ruby Bitters or Campari and garnish with some fresh orange peel twist. The Shiraz Gin gives this Negroni a different jammy twist and you must try if it Negronis are your thing. 700ml | 37.8% ALC./Vol. | $85 AUD At present I own bottles of the above-mentioned gins plus Rare Dry, Spiced Negroni Gin, Chardonnay Barrel (Drink neat over ice), Sherry Cask (Drink neat over ice) and Four Pillars X Herno. Some special editions of pre-made cocktails – Woodlands, Coastal, Metropolitan and Desert Negroni. Some gins I have tried while out and about – Changing Seasons, Modern Australian and Navy Strength. I haven’t met one yet I didn’t thoroughly enjoy. You cannot go wrong with a purchase from this distillery. Service has always been fast; postage and packaging are environmentally thoughtful and I love the funny notes I sometimes get written on packaging from the Four Pillars team- always brings a smile to my face. The bottle label is easily removed when the bottle is finished which I really appreciate as I like to re-use the bottles- they look great on the dinner table as water bottles and make a cute vase or I use them when I make homemade gins or sauces etc. The cocktail books that come with orders are also great editions.
